How We Make Our Dumpling Wrappers Fresh Daily

The wrapper is just as important as the filling. At Ugly Dumpling, we never use store-bought wrappers. Everything is made fresh from a simple dough of flour, water, and salt. Our head chef starts the day by mixing large batches of dough and letting them rest to develop elasticity. After resting, the dough is portioned and rolled to precise thickness specifications. For soup dumplings, the wrapper must be thin enough to be translucent but strong enough to contain the broth without bursting. This balance comes from experience and precise technique. Our team uses wooden rolling pins and marble surfaces to achieve the perfect texture. The humidity in our kitchen is monitored constantly because it affects dough behavior—too dry and the wrapper cracks, too humid and it becomes sticky. Each wrapper is dusted with cornstarch to prevent sticking, and we use only the minimal amount necessary. The freshness of our wrappers is immediately apparent when you eat our dumplings; store-bought wrappers have a distinctly different texture and flavor.
