Aromatics like garlic and ginger go in first to bloom their flavors in the oil. Proteins are added next and partially cooked before vegetables are introduced. Vegetables are added in order of required cooking time—harder vegetables first, more delicate ones later. Noodles are typically added at the end and quickly coated with sauce. The motion of stir-frying is important too; it should be constant and rhythmic to ensure even cooking. Our team uses a special wrist technique that comes from years of practice. The entire process from start to finish takes only minutes. Timing is critical because overcooked vegetables lose their texture and vibrancy.
