Despite advances in cooking equipment, bamboo steamers remain the preferred method for cooking dumplings at Ugly Dumpling. The bamboo material allows steam to circulate evenly while absorbing excess moisture, preventing condensation from creating soggy dumplings. The round shape of traditional bamboo steamers creates optimal moisture distribution. Bamboo is a renewable resource and imparts subtle flavors that complement dumplings. Metal steamers work but can leave a metallic taste and tend to create too much condensation. Modern electric steamers often overcook dumplings or cook them unevenly. Our kitchen uses dozens of bamboo steamers daily, stacked in towers over large pots of simmering water. The steamers are lined with cabbage leaves or special steamer paper to prevent sticking. Multiple tiers can be stacked on top of each other, allowing us to cook large volumes while maintaining quality. The porous bamboo lid allows steam to escape at a controlled rate. Dumplings are checked regularly during cooking and are removed immediately when done, ensuring optimal texture. The timing varies depending on dumpling type and size—soup dumplings take about 5-7 minutes, while other varieties may take 8-10 minutes. The bamboo steamer setup is not only practical but also connects us to centuries of culinary tradition.
